Coriander Pesto | A Recipe for Pasta Sauce
Last week I became the proud owner of this little beaut:
(Yes i’m aware it’s only a food processor but to me this is EXCITING) )
So I’ve been looking for simple sauce recipes for everyday meals, and as the worlds biggest pasta lover, and owner of a redundant bunch of coriander from a previous meal, this lovely recipe from Saskia seemed to hit the spot! I changed Basil to coriander and added a few extra touches. I can guarantee it is lush! (and really, chucking everything in a blender, what could be easier?)
Ingredients
100g walnuts, chopped
3 cups (100g) baby spinach leaves, chopped
4 cups (3 bunches) Coriander
6 garlic cloves, unpeeled
1 cup (250 ml) olive oil
¼ teaspoon salt
2 tablespoons lemon juice
50g grated Parmesan cheese
Pinch of cayenne pepper
- Blender, blend coriander, Spinach, garlic, cayenne pepper, Parmesan cheese, nuts, and salt. Add 1/4 of the olive oil, and blend the pesto. Add more olive oil until the pesto reaches your desired consistency.
- Pour pesto in a small saucepan and warm over low heat, stirring constantly, until pesto begins to simmer. Pour over cooked pasta and toss.
I had enough to last a few meals, and added some peas and goats cheese to serve

Thanks so much for the mention! Coriander sounds like a beautiful addition. I admit I’m a tiny bit jealous of your new food processor (I need to find some room in my kitchen)! Very impressed you could bung the garlic cloves in, whole (I roast mine first, to soften them). Will definitely try your coriander version.
